What's for Dinner?

I don't know about you, but sometimes I get stuck in a rut and don't know what to make for dinner. I'm always scouring the web for new, healthy recipes. I find a lot of recipes from other bloggers, i.e. heathereatsalmondbutter.com, crockpot365.blogspot.com to list a few.... I also use allrecipes.com, eatingwell.com and Google whatever I can't find outside of those sites. So this week I made a grocery list that included ingredients from 4 recipes that I will list and link to below.

Monday night: Cousin Cosmo's Greek Chicken

Modifications: Omitted flour, used chicken broth instead of bouillon and water.

Tuesday night: Stuffed Peppers

Modifications: Ground turkey instead of beef, one 15oz can tomato sauce instead of two 8oz, add shredded cheese on top in the last 5min.

Wednesday night: Jamaican Jerk Salmon

Modifications: Cooked in parchment paper rather than foil. Added honey and fresh squeezed lime juice for added flavor.

Thursday night: Sweet Potato Cottage Pie

Modifications: Ground turkey instead of beef. Added green bell pepper. Used Herbs de Provence rather than Thyme. Cooked sweet potatoes in oven on 450 for an hour. Then I sprinkled crumbled goat cheese on top.

I'm off kitchen duty on Fridays and Saturdays. On Sundays I cook whatever is left from the grocery store. Hope you like my ideas, and I would love it if you could share yours.

  1. I can relate to getting into a cooking rut. I have a husband and 3 picky kids to cook for and sometimes it feels like I make the same dishes over and over.
