Dashboard S'mores & Wild Rice Salad

In case you haven't heard, Dallas has hit almost 40 straight days of triple digit temps. We haven't had any rain for this long either. So what are us delirious Texans doing to keep from getting heat stroke? Making YouTube videos of cooking food in our cars! Here's a bored local:

I made a healthy dinner that's super-easy tonight! It's so easy that B.Flo could make it solo. I got the recipe from Here it is
Wild Rice Salad1 cup wild rice
3/4 cup light mayonnaise
1 teaspoon white vinegar
1 teaspoon white sugar
salt and pepper to taste
2 cups cooked, cubed turkey meat
1/4 cup diced green onion
1 cup seedless red grapes
1 cup blanched slivered almonds

1. Cook rice according to package directions. Remove from heat and set aside to cool.
2. In a medium bowl, whisk together the mayonnaise, vinegar, sugar, salt and pepper. Stir in rice, turkey, onion and grapes until evenly coated with dressing. Cover and refrigerate for 1 to 2 hours.
3. Before serving, sprinkle slivered almonds over the top of the salad.
Here's what I did different: I used chicken instead of turkey. Mixed in the almonds rather than sprinkling on top. And added a bit of KC Masterpiece BBQ sauce for a bit more flavor. I served it over organic spinach. It was healthy, easy and yummy!!!

I gotta get back to catching up on Shark Week episodes that I missed from last week. This is some SCARY stuff!!!
