Jambalaya- I found andouille sausage that is free of nitrates, MSG and gluten
Brisket Tacos
Jamaican Salmon- To make this healthier, you can wrap it in parchment paper instead of foil. And to make it juicier, I add a little honey and lime juice. 
Holiday Chicken Salad- I used light mayo and sliced almonds instead of pecans. I usually serve this over fresh spinach and call in 'Chicken Salad-Salad!' 
Blackened Tuna- I omit the butter
Alaska Salmon Bake with Pecan Crunch Coating- I use gluten-free bread crumbs and omit parsley and lemons. 
Chipotle Chicken with Sweet Potatoes

Greek Chicken Pasta- I use GF pasta
Sweet Potato Cottage Pie- sprinkle goat cheese on top
